It’s that time of year when cooking outdoors seems to be the only cooking anyone is doing. Unfortunately, that usually means slabs of animal protein and highly processed animal parts. We were walking through the neighborhood the other day and smelled the unmistakable scent of grilled hotdogs. A carcinogen and summer staple. 

The decision to not eat standard BBQ fare doesn’t mean you can’t be part of the outdoor cooking party. Here are a few easy and yummy things you can throw on the grill and enjoy 

Grilling baskets are for getting the yummy smoky flavor on veggies. Just rough chop your favorites, sprinkle with garlic powder and grill on medium until they are tender (15ish minutes). You can also use it for fruit if you are concerned it will fall through the grill

  • Good for: eggplant, zucchini, mushrooms, onions, squash, cherry or grape tomatoes, peppers, asparagus, broccoli, peaches, mangos, pineapple
  • Eat on their own or serve with barley or quinoa and/or beans
  • Finish off with some chopped scallions

Romaine hearts. Cut in half lengthwise. Season with salt, pepper, cayenne pepper, garlic or any spices you like. Place cut side down on the grill until slightly wilted and charred. Serve with lemon juice and balsamic vinegar.

Crispy potatoes. Bake or microwave potatoes until just tender. Don’t overcook or they won’t hold together. Slice into wedges, sprinkle with salt, pepper and garlic powder. Grill on high heat until the edges are crispy. Don’t turn to much. Let them get nice grill marks.

  • Serve with a vegan nacho sauce or guacamole for dipping or drizzle with balsamic vinegar.
  • Sweet, purple or gold potatoes work best for grilling

Veggie skewers. If you are willing to do a little more work than it takes to use a grilling basket, veggie skewers are a grilling classic. Chop everything the same size to cook evenly. Don’t forget to sprinkle with your favorite seasonings either before or after you grill.

  • Onions, mushrooms, tomatoes, peppers, pineapple, tofu
  • Marinade tofu before grilling. Soy sauce mixed one to one with maple syrup and a sprinkle of dried ginger is always a favorite.
  • Balsamic vinegar makes a great glaze. There are LOTS of different flavors to try. Just brush it on while the skewers are on the grill.
  • Pro tip – if you freeze tofu (the longer the better) and then thaw it back out the texture changes and it will stay on the skewers better

Bean and mushroom burgers. You can’t talk about healthy grilling without mentioning bean burgers! Make your own for the healthiest option.

Sides. Every good BBQ has great sides.

  • No-tuna salad is always a great option
  • Or macaroni salad by adding whole wheat pasta
    • Make it potato salad by adding (surprise) potatoes
  • Asian quinoa with veggies is a crowd pleaser
    • Just as good room temp as it is cold

Nice cream! If you have access to a food processor or high-speed blender, this is something EVERYONE will love

  • Three frozen bananas
  • One cup frozen cherries
  • Two teaspoons vanilla extract
  • ¼ cup maple syrup (more or less to taste)
  • One rounded tablespoon cocoa powder
    • Add all to the food processor or high-speed blender and process until creamy. Be patient. It will take a bit but in about five minutes you’ll have an amazing, healthy soft-serve style dessert
  • Serve immediately

BBQs are more about the people than the food. Don’t let the food keep you away from the people!
