Robyn's Cheese-ish Sauce Recipe

Note – this is NOT going to taste like oily, fatty, salty dairy cheese or oily, fake vegan cheese. It is meant to use in recipes like sweet potato lasagna (recipe under Robyn's recipes)to add depth of flavor and mouth-feel. After your taste buds are plant-based, you may like it on sandwiches and in wraps. If you have Standard American Diet taste buds, this is not “cheese.” That doesn’t mean you won’t like it. I just don’t want you to be disappointed.

Ingredients:Sweet potato lasagna with cheese-ish sauce

  • 2 cups soaked cashews*
  • 1 avocado
  • 1 overly ripe apple, chopped or ¼ cup unsweetened apple sauce (can get away w/o but is better with)
  • 4 Rounded tablespoons nutritional yeast
  • ¼ cup lime or lemon juice (fresh squeezed if possible)
  • Salt/pepper to taste
  • ¼ cup water or veggie broth (if needed)

Place all ingredients except water/veggie broth in a food processor or high-speed blender (you might need more liquid if using a blender). Blend until smooth, adding water/veggie broth if needed. Taste and adjust flavor. Add other spices for additional flavor. We have enjoyed, Cajun, cayenne pepper, and lemon pepper seasoning. 

*Soaking the cashews overnight will give you a creamier end result. If you don’t have time for that, you can use them dry. You will just end up with something that has a texture similar to ground nuts (which you won’t even notice if you’re using it in a cooked dish). I have subbed almonds in a pinch.

Additional note – this makes a large batch. Halve the recipe for a smaller quantity (obviously).
