An Amazing Plant-based Thanksgiving Day Meal - Recipes

Whole Food Muscle Club Tips For Easy Plant Based Meals
Whole Food Muscle Club Tips For Easy Plant Based Meals

For the past week my inbox has been blowing up with recipes for Thanksgiving. At one point I thought, “I wish someone would pull together a full meal of recipes all in one place so I don’t have to click all over the place.” So, here you go. Links to all kinds of yummy goodness you can make for the holidays (or any day you want really).

Life is Short. Start with dessert.

Who doesn’t love a nice hearty soup on a cold day? You know Russ is a big fan of SOUP! (as he calls it). This one is sure to chase away all chills. https://www.forksoverknives.com/recipes/moroccan-stew-butternut-squash-chickpea/

Mashed potatoes are such a big part of Thanksgiving that no table seems complete without them. And who better to get recipes from than the starch guy himself, Dr McDougall. Either of these recipes is sure to please even the toughest potato critic. Here are two from their recent email:

  • Roasted Garlic Mashed Potatoes: Cut the top off of one head of garlic (or more if you really like garlic), and drizzle 1 tablespoon vegetable broth over the cut portion. Wrap the garlic in parchment paper, then tightly wrap in aluminum foil. Bake at 400 degrees for about 45 minutes or until the garlic is a nice golden brown. Set the garlic aside to cool. Remove the garlic from wrapping, inverting it over a bowl to squeeze out the cloves. Add to potatoes when mashing.
  • Spicier Mashed Potatoes: Add 1 to 2 tablespoons of spicy brown mustard while mashing. 2 tablespoons of prepared wasabi will also make for an exciting variation. (I don’t know about you, but wasabi mashed potatoes sound REALLY good to me.)

Shepard’s Pie

Rip Esselstyn is less strict in his approach to plant-based eating than is father. And all the recipes I’ve seen from him are amazing. I’m sure this one is not an exception. https://plantstrong.com/plant-strong-recipes/shepherds-pie

Green Bean Casserole  Looking to replace the old standby with something healthier. This recipe promises to fill the bill nicely. https://www.forksoverknives.com/recipes/the-best-green-bean-casserole/

Kale Salad

You have to put at least one dark green dish on your table. This salad will break up the richness of some of the other dishes with a touch of heat. https://plantstrong.com/plant-strong-recipes/kale-salad-with-sweet-fiery-dressing

This time of year, it always seems like someone is showing up early to “help” you cook or spending the night after dinner. Or maybe you just like to pretend you are staying at a bed and breakfast and make yourself brunch. Regardless of your reasons, quiche is a fun option. https://www.pcrm.org/good-nutrition/plant-based-diets/recipes/kale-mini-quiches

There you have it. Pick any or all of these recipes and you’re guaranteed to put out an amazing Thanksgiving Day spread.

PS – If you are a member of our Facebook group, you know that I made my own Sweet Potato Lasagna to bring up to Russ’ mom’s for Thanksgiving. Russ and Dr Robyn,"

"You changed my life and my husband's. His cholesterol has been cut in half. We both have lost about 12 pounds and feel terrific. We don't miss meat, fish, eggs or yogurt or cheese. Thank you so much for all you are doing for the world. We too thought we were eating healthy but couldn't lose weight even though we exercised a lot. Until we changed what we ate. We are truly grateful. I loved your Christmas message about what to say to those comments people make when you say you eat Plant Based.

Thank you again."
